Born in Berlin and shaped by kitchens across Europe, Asia, and North America, Chef Carsten Radke brings more than three decades of international culinary experience to Mosaic. Classically trained within some of Europe’s most respected hospitality environments, Carsten is known for blending refined technique with a warm, people-first approach to dining. Passionate about mentorship and craftsmanship, he believes great food is rooted in discipline, creativity, and the connections built around the table.

Jaspreet Kaur

With over a decade of experience in luxury hotels and restaurants across New Zealand, Jaspreet brings a thoughtful, guest-centered approach to hospitality at Mosaic. From helping launch new dining concepts to leading high-performing service teams, she is passionate about creating experiences that feel polished, welcoming, and genuinely personal. Known for her warmth and hands-on leadership style, Jaspreet believes memorable dining begins with authentic hospitality and attention to every detail.

Kevin Gaskin

Inspired by his grandfather’s love of hospitality, Executive Chef Kevin Gaskin discovered early that restaurants were never just about food — they were about energy, connection, and creating memorable experiences for people. After training in some of Canada’s most iconic luxury hotels and leading culinary operations across the country, Kevin brings decades of experience, mentorship, and passion to Mosaic. His approach blends refined culinary technique with approachable comfort, creating cuisine that feels elevated, welcoming, and deeply rooted in hospitality.

Originally from South Africa, Marc Rabbolini’s hospitality journey has taken him from luxury resorts and cruise ships to leading hotel destinations across Africa and Canada. As Director of Food & Beverage, Marc brings a global perspective shaped by years of creating thoughtful guest experiences in diverse hospitality environments. Known for his collaborative leadership style and passion for service, he is dedicated to building experiences at Mosaic that feel seamless, welcoming, and genuinely memorable.
